The fruit of the bergamot tree, this citrus fruit, both sour and bitter and strongly lemon-like, is grown mainly in Calabria, Italy, where the quality of the essential oil is said to be the best in the world.
The bergamot essence is in small pockets in the skin of the fruit. This essence is extracted by cold pressing, a method without heating, where the fresh skin of the fruit is subjected to very strong pressure.
